Green Goddess Refresher

In 1923, The Green Goddess Dressing was created at the Palace Hotel by Executive Chef Phillip Roemer in honor of actor George Arliss for his lead role in William Archer’s hit play “The Green Goddess”. The Green Goddess Refresher is a no-spirit drink made with Cucumber, Tarragon, Lime Juice and Ginger Beer.

Boothby Cocktail, named after William T. Boothby

Made with sweet vermouth, bourbon, and bitters stirred together to make a Manhattan, The Boothby is finished with a champagne float - making it extra special and even more delicious.

Born in San Francisco in 1862, William T. Boothby was the City by the Bay's premiere pre-prohibition Mixologist. Much of his bartending skill was honed at the Palace Hotel. His bartending artistry was on display at the Palace daily where his repertoire ranged from historic gold-rush-era favorites to his signature drink,"The Boothby." 

In 1891,Bill Boothby published a fascinating guide to creating cocktails. Cocktail Boothby's American Bar-Tender is filled with unique drink
recipes that reflect the spirit of San Francisco. The Palace is proud to serve many of his original recipes, including his signature cocktail, "The Boothby." 

Martini Madness

The Pied Piper is well known for its delicious and well made Martini's. In the 1960's to 70's it was home to the Martini lunch crowd. 

In the 1970's to 80's Martini Madness was a popular happy hour style event that featured Martini specials on specific days of the week. In the mid 2000's, when the hit television show MAD MEN was at its peak of popularity - the Pied Piper was named "One of the Best Bars to Enjoy a Martini Mad Men Style". This inspired the Mad Men Martini - a vodka based cocktail a la Roger Sterling and a relaunch of the Pied Piper classic cocktail collection that included the Old Fashioned, Manhattan, Vodka Gimlet, Whiskey Sour and of course the classic Martini.
